Gsync alone doesn't cap fps as you're probably aware and for a fast machine like yours, if fps is likely to go over refresh rate then frames are either manually capped or Vsync is used to automatically keep fps within Gsync range and I assume u having frame spikes(run game very smooth then it just dropped to 20 or some, cause this stuttering) I had same issue but my games were RDR2 Witcher 3, ready or not.
